From Vegan To Carnivore And Back - What I Learned

Yes, after more than six years of eating a mostly vegan diet, I have experimented with eating mostly meat. Why did I go from one end of the dietary spectrum to the other? Why not just eat a balanced diet?

To be honest, I would like to have some of this carnivore-stamina.

In my past, I had to deal with some digestive issues and cured them through a primarily plant-based diet. But I still had some areas that I was not totally satisfied with. I like to experiment with my diet and see how different foods make me feel. That way, I ate a low-carb vegan diet for a long time now. I am generally doing some form of intermittent fasting too. Among all the vegan foods and supplements that are supposed to improve health, I was attracted and may be blinded by the simplicity of the carnivore diet. Eat meat, drink water.

As it turned out, while working on a free-range cattle farm in Denmark, I had access to a lot of meat, which otherwise would have been thrown away. In this case, I had no moral or environmental issues with eating a lot of meat. Let the meat feast begin and my experiment with the carnivore diet.

I had no issues adopting this diet coming from a low-carb vegan diet. In the beginning, I was still eating a green leafy salad every day. But I reduced it over time. And for a few weeks, I ate almost exclusively meat, still including some coconut and olive oil, but basically no fibre.

I was very surprised to learn that this did not cause any constipation. Stools were of course considerably smaller, but easy to pass. My digestion felt good all the time. Basically, the feeling is similar to water fasting, pretty much empty all the time. Something to get used to, as there is no more being "full" after a meal. Satisfaction still set in though, just through a different mechanism it seems. Instead of the stomach being stretched it is more a signal coming from the brain.

I also did some blood-tests during this time. And this is where the diet became really concerning to me. Before the test, I rode my bike for 15 minutes at a moderate pace. I say that because it might explain the high triglycerides because I haven't eaten anything for more than 12 hours.




I am particularly concerned about the high cholesterol in combination with the CRP value being on the upper end of the spectrum. This means I fall into the high-risk category for heart disease. But according to some of the keto advocates I would be classified as a "lean mass hyper responder". Which means that lean and athletic people tend to experience the highest increase in LDL-cholesterol and total cholesterol. As the body as little other reserves and no glucose available it has to be able to quickly mobilize a lot of fat when exercising. To do that, the body produces a lot of cholesterol.

But I am concerned that this cholesterol is just not good for my arteries in the long run. Based on all the best available evidence, the overwhelming amount of research shows that is saver to have lower cholesterol levels. The whole foods plant-based low-fat diet is the approach with the most scientifically sound data backing it. Taking into account research funding by the industry it is clear that most of the low-carb and ketogenic research might be biased in favour of restricting carbohydrates.

Additionally, during some days on the carnivore diet, I experienced some intense chest pain, increased heart rate and blood pressure. I never had this happen before. Not even on a high-fat vegan diet.

Here is what I am going to do:

I have ended my carnivore diet around a week ago and started a water-only fast. I want to extend the fast to 14 days. Coming from a ketogenic diet is a good way to start a water fast as the body does not have to switch fuels from carbohydrates to fats. The transition period was easy.
After that, I will go back to the diet which I think is the healthiest in the long run: a whole-foods, plant-based, low-fat diet. Will I eat completely vegan? Probably not. On certain occasions, where the best quality meat is available, maybe a handful of times a year, I will eat meat. But that will still make my diet 99,9% plant-based.

This is the diet that has healed my digestive issues and has kept me feeling very good for the majority of my vegan period. But my experimentation with the low-carb approach was definitely interesting and has me taught to understand people eating carnivore. There are definitely benefits to this way of eating. But overall and for the majority of people, the whole-foods plant-based approach is by far the better option. And for the environment, it is anyways because even totally free-range raised meat requires much more land and resources than sustainably farmed plants. Not to mention that most people can't or won't afford the cost of this meat and instead by lots of factory-raised meat products.

How to prevent muscle twitching on a ketogenic diet

I made a pretty interesting discovery about the mechanism behind muscle twitches (also called benign muscle fasciculation syndrome) in relation to a low carbohydrate ketogenic diet. I gave the very low carbohydrate diet many attempts in the past. Whenever I would lower my carbohydrates below around 50 grams per day, I would get muscle spasms all over my body. A muscle would contract only once and then a few seconds later another muscle somewhere else would contract. Most of the time it wasn't visible but I could feel it every time. It feels like all your muscles are charged and could contract every second.

I have discovered what causes this on a ketogenic diet. And even though I mentioned before that salt was helping, it actually has nothing to do with salt. Any relief from a high salt intake was only temporary and I would have to take increasing amounts of it. (At this point I also want to mention that I no longer follow a ketogenic diet, you can read a new blog-post about my current diet.)

I will tell you how I discovered this and how you can prevent this on a ketogenic diet.

As I was researching these symptoms in relation to keto, electrolytes and magnesium were always mentioned. But both would not help. So I didn't find the solution here yet. 

One day I researched keto in high altitudes because I was planning to go on a hike in the alps. With nuts as my fuel source as they are the most calorically dense whole plant food. I found out that eating ketogenic while in high altitude can be tricky. And here it also gets tricky and technical to explain this.

As the air is less dense at high altitude, you have to breathe a higher volume of air to absorb the same amount of oxygen. This is problematic because the body will lose a certain amount of CO2 per air volume that is breathed in and out. It takes a couple of days for the body to adjust to this and reduce CO2 loss. 

In the cells, there needs to be a balance of CO2 and O2. So with the loss of CO2, the cells are also not able to take up enough O2 which can be deadly in extreme cases. That is also the reason why hyperventilation (aka Wim Hof breathing) is dangerous. Don't do it. You won't increase O2 levels by doing this but actually decrease cellular O2 levels exactly because this balance needs to be maintained. In order to prevent the loss of CO2 (and therefore O2), the blood vessels in your brain restrict and you feel dizzy. 

The problem with ketogenic diets in high altitudes is that, as the body uses fats as it's the main source of calories, it needs less oxygen for the same amount of energy output. Less oxygen utilization means also less production of CO2. This is widely known and used to measure an athletes state of fat utilization through breath analysis, so I won't go into that here. At high altitude, this can potentially be a problem, because less CO2 is available in the cells. In altitude, the increased breathing volume pulls the CO2 from the body, and O2 levels might drop to critically low levels. But here the body can adapt over time as well and you also require less oxygen, so it balances out.

But what has all this to do with muscle twitches on keto?
I did not make this connection until a couple weeks later. I was trying the very low carb diet again and had the same issue. Muscles started to twitch, salt did not help anymore and so I ended up researching for benign fasciculation syndrome. It is not so uncommon and many people experience it at least once throughout there lifetime.
Probably everyone knows the annoying eyelid twitch. But that is not what I had. My muscle would twitch only once and then another one would twitch.

And then I also found this video. It is in german, but this doctor made a genius discovery. He has discovered that CO2 is relaxing and that low levels of it lead to nervous system over-excitement. He has connected the CO2 loss in his patients to increased breathing, caused by stress. Everybody knows that in stressful situations you increase your breathing. In order to quickly run away from a lion, this was probably a helpful adaptation. But constant low-level stress (where you sigh) has the negative side-effect of increased loss of CO2. Low energy levels because of low cellular O2 levels follow.

Through controlled and slow breathing I was able to completely stop my muscle twitching. It took only about half a day. I guess after a couple of weeks of strict keto this side effect would have subsided by itself. But I never went that long to find out because I was too concerned about it and increased my carbs. Now, after eating ketogenic or very low carb for a long time, I never have this issue anymore. The body adapts to the decreased production of CO2 by holding on to more of it, it seems.
Interestingly, I only get the twitches sometimes after intense exercise. Which, for me, is another sign that this theory could be true. Because, after intense exercise, the increased breathing persists for some time after you actually finish and you lose CO2.

Conclusion:

The adaptation to keto is partly comparable to the adaptation to high altitude. Because less CO2 is produced in the burning of fats, the body has to adapt by conserving more of it. This could also explain why some people feel the keto-flu, where they feel low in energy. 
The solution is simple though. Pay special attention to your breathing for a while and breath slowly and regularly. While sitting, I am now at about eight in- and out-breath per minute.

The Psychology Of Daily Cold-Exposure

I started winter-swimming in a nearby lake six weeks ago. During the last two weeks I have been doing it daily and I plan to continue to do so. In this post I want to reveal the insights I had into my own psyche from this experiment.

 Test of your mindfulness

What happens in your mind when you face a painful and counter-intuitive challenge every-day. As I am practicing mindfulness throughout the day it is especially interesting to observe my mind when faced with such a challenge. The water has a temperature of around 4°C. Outside temperature is often between 3-9°C the last couple of weeks. On some days I encounter the additional joy of strong winds, which make the time after swimming equally cold until I am dressed up again.

Your mind makes you suffer not the experience
What I found is that the mind is inherently bad at predicting the degree of pain and suffering. When approach the lake and getting undressed my mind comes up with all sorts of excuses of why it is better not to do it today. This quickly becomes tricky business. The mind is quickly deceiving you into believing something else than the truth. The exaggerated fears and the anticipated pain quickly becomes entangled with all sorts of other excuses, like catching a cold or freezing to death. Which of course is mostly non-sense if you approach it with careful and gradual cold-exposure. 

This practice makes it unmistakably clear that thoughts have nothing to do with who we are. The decision to go into ice-cold water every day is not made by the thoughts. If I were the thoughts, I would not go in the water. The doubts and the thoughts that say no are in the mind-space while something else just goes in the cold water and stays in there for as long as the timer demands. 

Becoming a superconductor
Make no mistake, the water causes you a lot of pain, especially in the hands and feet. The meditative practice here is to become a superconductor for this pain. As long as you don't resist it, it isn't painful. This is a beautiful experience. You experience that the sensation we call pain is inherently empty. By staying with it in every millisecond without resisting it, there is no pain. But as soon as the mind fights it, wants to change it, can't accept reality and wants the present moment to be something else than what it is, there comes the pain. Shinzen Young talks about this in his meditation technique, which he calls strong-determination-sitting. You can experience something similar within seconds of entering ice-cold water. It's a true test for the strength of your mindfulness-muscle. 


Not believing the fearful predictions of the mind
Very quickly we believe in the scenario that our mind presents us with. You think about some future dream of yours but your mind comes up with all sorts of bad consequences that might happen... Don't be so quick to believe what your mind is presenting you with here. But don't go to the other end of the spectrum where you do not think at all about the consequences of your actions. 

What you can do instead is ask yourself: How likely is it that the scenario my mind has come up with will happen? And if it happens, would it even be as bad or painful as my mind makes it seem at the moment? What can I learn from my past experience? How have the situations I encountered actually turned out when I predicted them to be bad, fearful or painful?

It is funny to be in ice-cold water and to experience that very thing you feared. I already started laughing about myself several times and thought: What? This is the thing I feared and wanted to avoid? It's not inherently bad at all. And afterwards it feels genuinely good to have overcome and seen through the fear and pain once again. 

Water Fasting to Completion - Day 1 & 2

Day 1:

I spend most of the time in bed and was able to keep warm. But I also went out for a walk to get some movement and fresh air. For heavier individuals I would definitely recommend regular light exercise during a fast. But I try to conserve as much energy as possible. And therefore I will not spent to much time outside, especially now that the temperature in January is below 0°C.

I felt good and less hungry (empty stomach) than I anticipated. I read recommendations that say to even keep mental activity to a minimum, but outside of my meditation practice I cannot stand the boredom of not doing anything for very long. I keep my mind busy with reading, writing and listening to music.

I had two bowel movements this day, which were quite normal. The day before I ate also quite normally, so that was to be expected. 

Overall I probably drank less than one liter of water. I do not have a great desire for drinking water. And even the times I drank where not really because of very strong thirst. The seven and ten day fasts I did before, I was drinking to much water. Probably upwards of two liters per day. Now I see how this was detrimental and its connection to the issues I had during those fasts. For example on the second fast I felt so cold, that lying on a heating blanket was not enough to get me to feeling warm. But I was probably also not adjusted to burning fat, as I was eating a mainly fruit and starch based diet before those fasts. 

From that experience I would now recommend to drink according to thirst and eat a high fat diet. At least a couple of weeks leading up to the fast. This will make the fast quite an enjoyable experience, in my experience ;)

Day 2:

I had another bowel movement of smaller size this day. I was a little surprised about that, as it was about 40 hours after the last meal.

In general I feel really good. I can definitely say that I feel better than before fasting. Listening to music has become different. Kind of like the music is more rich, more saturated and more surrounding. It really sucks my complete attention in if I close my eyes and listen with headphones. It feels similar to listening to music when taking a small dose of magic mushrooms. I am sure the fast is starting to affect my brain chemistry.

During the night I had vivid dreams and some of them were lucid. Even though I did not remember to act out the dream-goal I wanted to achieve, I still was able to remember the dream vividly.

Water-wise, I definitely drank again less than a liter. 

I still feel warm and apart from muscular weakness, I do not feel tired or exhausted at all. To the contrary, I can feel a generally more positive outlook develop in me with an increased desire to do things and get things done. I look forward to the experience of going to work tomorrow. 

Today I bought an audiobook called extinction. I really enjoy the experience of lying bed and getting fully absorbed into the story and once own imagination. This way I can really see a long fast being very enjoyable, even with almost complete bed-rest if that should be necessary. 

Water Fasting to Completion - What it is and how I go about it!

To treat an underlying issue I had for many years I am conducting a water fast. I have not decided about the length of the fast as advised by Dr. Shelton. He advises to finish a fast with the return of real hunger. This is not a hunger felt in the stomach but in the mouth and throat. So I will embark on this water fast without knowing up front how long it will take.
This will be my journal of the experience.

There was once a whole season, where food might
not have been so plentiful and readily available as it is today.
We had to be highly adapted to even prolonged fasting.

Why do I conduct a prolonged water fast even though I do not need (or even can afford) to lose any weight?


As for most people, who embark on the journey of a water fast, my reasons are health related. Nine years ago I have been diagnosed with intestinal disorders called ulcerative colitis and crohn's disease. Yes, doctors diagnosed me with both, whereas the usual reasoning is, that you can only have one. 
Even though I know think that the outbreak of these illnesses were stress related, I did not see that back then. And from a medical perspective it is said to be an incurable condition. And that pervaded my thinking for many years.
About six years ago I switches to a mainly plant based diet and through trial and error found out that I could control my symptoms. But I never really managed to stick to one approach and become completely symptom free for an extended period of time. Most of the times I have done blood test, the marker CRP, showing the systemic inflammation level, was slightly elevated. Thus increasing my long term risk of developing complications in other areas as well.

With the water fast I try to restore completely healthy tissues in the digestive tract. Starving out any harmful intestinal bacteria that might be present. Restoring digestive capacity. Gaining healthy weight, so that I my weight is back into the normal weight range. And increasing nutrient absorption efficiency so that my body is able to digest what I eat. 

In parallel to the digestive disorders I developed a skin condition called psoriasis. It is only limited to my scalp, but there is almost always present. It is not in a very bad condition, but I have to make sure to wash my hair daily, otherwise dandruff will be visible. Additional itching of the scalp makes this a very annoying condition to have in the long run.

Lastly I have three further "injuries" that I hope to heal during the fast:
  1. while running a couple of weeks ago in the cold weather and stretching before being fully warmed up, I pulled a muscle in the back of my upper leg. It is quite painful at times and did not heal yet
  2. Three years ago I injured my shoulder while training in the gym. Even prolonged pauses from training did not manage to heal it. Every time I resume even moderately heavy lifting with my shoulder I feel pain in that area.
  3. When running for more than 3-4 km at a time, my right knee starts to hurt. From an MRI scan I know that it is a small cyst, which is too small to operate. I hope that a fast to completion might dissolve this obviously unnecessary tissue.

What are the specifics of the fast?

I go about the fast with one primary rule in mind: I will listen to my body and my instincts. 
I set secondary rules to ensure I can trust my body, its signals and my instincts. 

What do I mean by that more specifically?
  • I am drinking according to thirst and not any set amount that I think I need to drink according to some theory. This is probably much less than the recommended two liters per day.
  • I will resist to put food in my stomach based on the feeling of emptiness/acidity in the stomach. This is supposed to last for 2-3 days. 
  • I will resume eating once the unmistakable sensation of true hunger arises. This is supposed to feel similar to true thirst, which is felt in the mouth and the throat. And only the desire for pure water is present and strongly sought after
The secondary rules are the following and serve the purpose of creating an environment in which our instincts evolved and can be trusted:
  • When breaking the fast I will resist the urge to indulge in unnatural food. I cannot consider to trust my instinct when I allow for unnatural food to be part of the choices that they can safely judge.
  • I plan on continuing my high fat whole food plant based diet after the fast
  • Being optimally adapted to fat burning after the fast, I do not plan on breaking the fast with carbohydrate-rich foods, as those might not be the foods a fast could be broken with under natural circumstances.
  • I plan on drinking half a glass of nut milk at each hour after the sensation of natural hunger returns
  • On the second day I increase that to a full glass every to hours. 
  • On the third day I plan on having nuts, seeds and leafy greens blended into smoothies, gradually increasing in size
  • As it has not been done many times before to break a fast in such a way I have to be extra careful of any symptoms of indigestion

So this is how I plan to go about this fast and what I hope to gain from it.

Intermittent Fasting vs. Regular Caloric Restriction

Today I would like to talk about the difference between caloric restriction at every meal and Intermittent Fasting. Especially in regards to the question which strategy is more feasible as a long term strategy to extend lifespan.


Research indicates that caloric restrictions leads to an efficient metabolism and a slowed aging process. This can either be achieved by general caloric restriction or by a restricted feeding window, also called intermittent fasting. Both ways should lead to a decrease in caloric intake. And finally it should be made clear that this article is evaluating the pros and cons of these approaches in the light of life-long caloric restriction. In short term many things might work if the goal is just fat-loss. For long-term compliance more aspects need to be considered.

Intermittent Fasting

In my experience a shortened eating time during the day is not enough to ensure such a caloric restriction. I find myself quite capable of eating a big amount of food in one meal. Therefore attention to caloric intake still has to be paid. With that said let’s discuss the advantages and disadvantages of this approach:

Advantages:


  • Less time spend preparing food and eating
  • With fewer meals, one can eat to greater satiety after the meal
  • Therefore, in theory, a caloric deficit is easier to achieve
  • Feelings of hunger are compressed into one fasting window
  • Hormone-release during the fasting period leads to increased fat utilization
  • Easy to tailor around social eating events
  • The relationship with food will be revealed (e.g. emotional eating)

Disadvantages:


  • Challenging for some people to get all the required nutrients in one or two meals per day
  • Once appetite is used to eating bigger meals it takes time to go back to several smaller meals
  • Hunger or rather the feeling of an empty stomach might be an issue for some people

Regular Caloric Restriction

With regular caloric restriction I assume three meals a day and a mainly or almost exclusively plant-based diet. Plant-based eating has been shown to have life extension properties on it’s own if done correctly. A healthful diet includes only whole foods and should make caloric restriction easier because of increased satiety. Here are the Advantages and Disadvantages of this approach compared to intermittent fasting:

Advantages:


  • Smaller meals are easier to digest and assimilate leading to higher nutrient absorption
  • Easier to plan even sized meals
  • Regular eating might reduce hunger in some people
  • High amount of vegetables can (needs) to be eaten at every meal to ensure satiety – this also leads to the advantage of high nutrient-density of the diet
  • Higher intake to healthy high fiber foods possible

Disadvantages:


  • Lower satiety at each meal, "the need to stop before satisfied"
  • Harder to adjust to social eating (when portion sizes in restaurants are bigger)
  • Might not fit some peoples schedule
  • Meal preparation might be necessary



In the end it is a matter of preference. But just make sure to give each approach a decent trial period before you judge it. Your body has to adjust either way. Give it at least 30 days on each protocol.
In my next article I will discuss how I go about it and combine fasting with regular caloric restriction to reap benefits of both approaches.


Combining intermittent fasting with exercise and cold showers

I have so far experimented with two ways to increase the positive effects of fasting. While intermittent fasting can be a great tool to increase autophagy it can also be difficult to eat all the daily nutrition in a very short eating window.

So I asked myself the question: How can I have a larger eating window while still getting the benefits of prolonged intermittent fasting (20-23hours a day)? I feel that protocols that implement shorter duration of intermittent fasting (16-18h) do not evoke the same metabolic responses as those longer protocols. But with short eating-windows it can be difficult to digest and absorb all the food, especially if vegetables make up a big portion of ones daily food.

Therefore having an eating window of around 6-8 hours with two large meals (high volume due to large amount of vegetables) at the beginning and the end was my goal. Without compromising the benefits of the fasting period. I found two ways in which this might be possible: exercising and cold showers during the fasting period. So far this might not be a new idea for you. But I believe the trick is to fast for several hours afterwards.

So a typical day might look like this:
·         6:30am wake up and 30 min of bodyweight workout. Alternating muscle groups daily with three different training days.
·         7:00am cold shower: 1min warm/ 3min cold/ 1min warm/ 1min cold
·         Continue fasting until 12:00am – lunch: high vegetable; high in fat, medium in carbohydrate and protein
·         6:00pm-7:00pm – Dinner: high vegetable; high in fat, low in carbohydrate and medium in protein

This gives me around 5 hours after my sport and cold showers in the fasted state. If you try this out you will recognize how much different this approach feels from normal intermittent fasting of same duration.

Exercise is known to increase autophagy and by combining this with fasting you will increase this effect even further. The body is basically pushed ahead into higher autophagy similar to several hours of fasting. You are basically jumping from the 10h to the 16h mark. (Just an idea, I have not measured it :D)

In this way you have already increased the efficacy of the fast. The continued fast after exercise forces your body to recycle everything possible in order to provide for the muscular regeneration. Stress hormones are released that not only wake you up but also increase fat burning.

If you now combine this with cold showers it will enhance fat-burning, ketone-production, GABA- and BDNF-release even further.

The cold shower should in theory have following effects:
·         Activation of heat generation in brown adipose tissue
o   This will pick-up glucose and fatty acids from the blood stream, lowering the blood-glucose spike from the exercise
·         Increase wakefulness through the release of adrenaline and cortisol
·         Lower body temperature à more calories burned in the following hours (coming from fat) as you continue your fast
·         Increase circulation (in combination with the shift to warm water) of blood and lymphatic fluids
·         Enhance recovery from the workout
·         Make you clean and leave you feeling refreshed

After following this protocol for two weeks, I found out that I can combine the benefits of high vegetable consumption and eating twice daily (an enjoyable, large meal, high in vegetables) with the benefits of a longer daily fast.

I might even go so far to say that this approach is superior to the longer daily fasts. The reason is that the huge meal (as in the one meal a day protocol) takes considerably longer to digest. That basically shortens the real time spend fasting anyways. Two smaller meals, containing basically half of the calories digest much better than the giant one meal.

The greatest advantage of this approach for myself so far is that it takes almost no will-power. Eating within a 6 hour window, it is absolutely possible for me not to get hungry.
